Acqua al 2, named after its original address on Via dell’Acqua n°2, was established in a small three-room space in Florence, Italy, in 1978. Founder and head chef Stefano Innocenti identified a market gap for young people studyingand working in Florence who loved dining out but had limited budgets. His vision was to offer high-quality food in asetting distinct from the traditional Tuscan trattoria. He introduced a unique menu featuring a variety of pasta dishesfrom across Italy. The restaurant quickly became a hit, with people lining up late into the night for an assaggio diprimi or a filetto al mirtillo.
Attracting students, tourists, locals, and theatre performers, Acqua al 2 has maintained its charm over generations with its cozy atmosphere and animated service. The restaurant is celebrated for its quality and consistency, with a largely unchanged menu and management team. Expanding its reach, Acqua al 2 has opened franchises in San Diego, Washington DC, Annapolis, and now West Stockbridge.

Valentino’s passion for hospitality grew in the vibrant streets of Florence, where he thrived as a nightclub owner. The food and vibrant atmosphere made Acqua al 2 his favorite place to dine, and he was thrilled when asked to become a partner of this renowned restaurant.
Liza, originally drawn to Florence for her studies in printmaking, found herself captivated by the city’s rich history and timeless beauty. After living in Florence for six years as a married couple, the city will forever hold a special place in their hearts. Their journey has now led them to the Berkshires, where Liza’s family has had a home for over 20 years. Here, they envision a restaurant that goes beyond just great food—it’s a place where culinary delights meet artistic expression, where friends and families can linger and connect over delicious meals.
Drawing inspiration from their time in Italy, Valentino and Liza aim to recreate the magical ambiance of Florentine dining, where every meal is a special experience.
